Coconut Chia Pudding with Maple and Seasonal Fruit

Instructions

1. Add the water and Organic Coconut Milk Powder to a bowl or jug and whisk until smooth.

2. Add the chia seeds, maple syrup, vanilla, cinnamon and salt. Whisk thoroughly to distribute the chia seeds evenly.

3. Cover and refrigerate for at least 4 hours, preferably overnight. Give the mixture a good stir after about 30 minutes to prevent the chia seeds from settling. The pudding should be thick and creamy once set.

4. Divide between four jars or bowls. Top with fresh seasonal fruit and a sprinkle of coconut flakes or toasted seeds.

TIP: Chia pudding is incredibly versatile. Try topping it with banana and toasted seeds, berries and coconut, or diced mango and passionfruit when they're in season. For a richer pudding, replace some of the water with your favourite milk.
