Creamy Coconut Steel Cut Oats With Cinnamon, Banana & Toasted Seeds
Ingredients
- 1 cup Organic Steel Cut Oats
- 2 cups water
- 2 tbsp Organic Coconut Milk Powder
- 1 tbsp Organic Raw Sugar, or to taste
- 1 tsp Organic Cinnamon
- 1 ripe banana, sliced
- 1–2 tbsp Organic Seed & Nut Salad Mix, or your favourite seeds
- 1 tsp Organic Virgin Coconut oil
- Pinch of sea salt
- Extra banana, seeds & cinnamon to serve
- Optional drizzle of Organic Maple Syrup
Instructions
Place the steel cut oats, water and a pinch of salt into a saucepan. Bring to the boil, then reduce to a gentle simmer.
Cook for 20–25 minutes, stirring occasionally, until creamy and tender.
Mix the coconut milk powder with a little warm water to form a smooth paste. Stir into the oat with the raw sugar and cinnamon.
Add half of the sliced banana and cook for another 2–3 minutes.
Meanwhile, heat the coconut oil in a small frying pan. Add the seeds and toast for 2–3 minutes until golden and fragrant.
Divide the oats between two bowls and top with the remaining banana, toasted seeds and a sprinkle of cinnamon.
Finish with a drizzle of maple syrup.
TIP: For an even creamier bowl, add a splash more water or your favourite milk just before serving.
